Distinguished guests,

All welcome to the 2nd Food Structure Design Congress, Antalya and Turkey.

I am so pleased and honored to see so many colleagues and friends from all over world. I hope this congress will provide new opportunity and friendship for your future scientific activities.

This congress series was started firstly in Portugal by Prof. Antonio Vicente two years ago, as a continuation of our COST Action FA1001 which was under leadership of Prof. Laura Piazza. I would like to thank to them for their great efforts. And, I hope that it will be continued by you and our other colleagues.

We have 111 participants from 21 different countries. In fact, we were expecting more participant especially from our COST action. Maybe some people hesitated to come to Turkey because of some risky situations.

Actually, these risky situations are not wholly sourced from Turkey. Turkey has got more than 1000 km border with Iraq and Syria and suffering from their crisis. They are producing risk and they export it to Turkey as instability. Also, Turkey had to accept 3 million refugees who were mostly innocent.

Although, all these negative effects, Turkey is developing in all points, I mean it is accumulating energy. But, energy unfortunately produces entropy.

I mean, for humanity, we should think about what we can do?

I think, we need more communication with social, cultural and scientific organization like ours.

As you know that the one of main purpose of food science is to understand of relationship among food structure, digestion and bioavailability. I hope that our congress Food Structure Design will make contribution to this aim with your scientific activities. And I hope that you will find chance to explore beauties of Antalya and Turkey in your free time.

Of course, as you know that the success of the congress mainly depends on collective effort and active participation in sessions. Our congress’ scientific program is including in 5 invited speeches, 23 oral presentations and more than 100 posters.

Also, it is including 2 voting and award sessions for the best poster and oral presentations to motivate and to remind our congress in the future.

Please don’t hesitate to ask for any help to me and people who are wearing black t-shirt, they are mostly organizing committee, also researchers and my students.

Finally, I would like to thank to the organizing committee for all their hard work and to the scientific committee for their great efforts in evaluating many of the abstracts. I also would like to thank to all participants, speakers, session chairs, sponsors and Leon Congress who helped the congress happen.
